Chicken Soup

Chicken Soup

Poach 2-3 skinless split chicken breasts in enough water to cover by several inches.  Sprinkle in a generous amount of Mrs. Dash (flavor of your choice).  Bring to a boil and then cook for 30 minutes.

Remove chicken to cool.  To the broth, add four peeled and sliced carrots and four peeled and cut potatoes and cook for 15-20 minutes.  Add another generous sprinkle of Mrs. Dash.

Take the cooled chicken off the bone and discard the bones.  Cube or shred the chicken and add back to the soup.  Add more of your favorite prepared chicken broth if needed.  Then add three handfuls (hey – it was my grandmother’s recipe!) of your favorite small pasta.

Cook 15 minutes more and adjust seasonings – salt and pepper, and more Mrs. Dash if necessary.  Enjoy!
